For our potato chips, we recommend defrosting them before frying for the best results. Here's a step-by-step guide:

  1. Preheat your fryer to 350 degrees.

  2. Allow the chips to slack – either pull them out of the freezer and let them sit for 30 minutes or store them in the fridge.

  3. Take the fry baskets out of the fryer and skim the oil to ensure no floaters are present.

  4. Fry the chips, stirring every 30 seconds, until they achieve a GBD (Golden Brown and Delicious) perfection, and the oil bubbles slow down.

  5. Use a spider to drain the chips in the fry baskets, shaking for 30 seconds until the oil stops dropping off.

  6. Transfer the chips to a large fry bowl and generously season them with your favorite BBQ, Cajun, Old Bay, salt, or any preferred seasoning.

  7. For an even coating, sprinkle the seasoning over the top, toss, and repeat this process around 5 times, or until you feel they are evenly covered, more or less.
